Following several powerful personal experiences, Patrice Percie du Sert, agricultural engineer, beekeeper and researcher, has dedicated his life to bees and hive products. Pollen, an essential element in plant reproduction and biodiversity, also has a major impact on human health. Rich in amino acids, fiber, enzymes, vitamins, polyphenols, trace elements, lipids and lacto-ferments, it is a vital support food. But consuming it correctly, i.e. without losing its micronutritional benefits and, above all, without harming the hive, requires very specific vigilance. In this dossier, Patrice Percie du Sert and I dive into the heart of a bee community to gain a better understanding of pollen harvesting, the bees’ work of foraging, the different flower essences and the transformation they carry out on the pollen, which will confer major health benefits on these little grains of gold!
